原料：

肥肉、瘦肉、馬蹄、蔥花、薑末、蒜末、螃蟹、雞蛋、蠔油、生抽、鹽、糖、料酒、澱粉、排骨、八角、冰糖、蔥段、大蒜、料酒、蠔油、老抽、生抽、水澱粉。

做法：

1、肥肉切筷子頭大小、瘦肉切小塊後剁成肉碎、馬蹄切末、蔥花、薑末、蒜末備齊；

2、螃蟹蒸熟，將蟹肉拆出，稍稍剁碎；

3、肥肉丁、瘦肉泥、馬蹄末、蔥花、薑末、蒜末、蟹肉放入大碗，加入一個雞蛋適量蠔油、水、生抽、鹽、糖、料酒、澱粉，朝一個方向攪拌上勁，成為肉餡；

4、鍋裡加入適量水，當水溫微熱不燙手的時候，取適量肉餡在手中左右摔打、團成較大的肉球，然後將團好的肉球放入溫水里小火加熱，使之慢慢成型、變色後撈出；

5、另取一隻鍋，加入少量油，將汆燙洗淨的排骨、八角、冰糖、蔥段、大蒜，小火炒香，排骨煎黃；

6、放入肉球翻炒，乘熱噴入適量料酒，加入適量蠔油、生抽、老抽炒勻；

7、一次性加入足夠的開水（汆肉圓的水煮開即可），大火煮開轉小火慢燉1.5-2個小時；

8、等排骨軟爛，湯汁變少時開大火收汁，加少許水澱粉勾薄芡即可。

小牛貼心提示：

1、做肉圓的肉餡，最好是肥瘦相間，肥肉切成筷子頭大小，瘦肉先切小塊再剁碎，加入適量馬蹄末（蓮藕）可以使口感更好，最好不要選用絞肉機絞成的肉泥；

2、攪拌肉餡最好朝一個方向，加入的水，最好是生薑、蔥段浸泡過的蔥薑水，用量不要過多；

3、肉餡攪拌好以後，在2隻手裡來回摔打，可以使肉餡更緊密的結合在一起，容易成型；

4、汆肉圓的水，切忌不能是開水，否則肉圓下鍋以後會被煮開，樣子、味道都不好且難以成型，肉圓盡量做的大一點，因為汆燙、燉煮都會使之縮小；

5、燉煮肉圓加入適量排骨可以讓成品味道更豐富好吃，燉煮的時候最好一次加入足夠的水，中途不要加水；

6、最後燉好以後加少許水澱粉勾薄芡，可使成品更好看、好吃。
